Karen Torosyan is a craftsman par excellence. A passionate chef with respect for the past who has patiently developed his own kitchen. In collaboration with his right-hand man Cassandre Ercolini, he turns old kitchen techniques into an art. The precision and calmness with which he has mastered, for example, the pâté en croûte and pithivier (only available on reservation), arouses admiration. This perfectionist translates the emotion he carries to the board.
We will take you along to experience his puff pastry preparations. These are presented at the table before they go into the oven. What follows is a tasting of a special finesse: the rich crispy crust. The smoothness of the filling (think of a combination of veal sweetbreads, foie gras, Corrèze veal, cabbage and trompettes de la mort). The veal gravy that harmonizes everything. Wow! Such refined interpretations breathe new life into culinary classics. Finesse is what chef Torosyan strives for, depth is the result of his captivating search.
His eye for beauty and detail is not only evident in the plate, but also in the beautiful surroundings. This pearl bears the Art Nouveau stamp of Victor Horta. Karen Torosyan deserves his place in the Bozar museum.
