From history to the table, from the sea to the kitchen. A family history, made of traditions and love for fish. From the historic restaurant in Formia, eleven years ago, Stefano headed to Rome, first to Piazza Barberini, then to Porta Pia, with the aim of bringing the sea to the city. His knowledge for the catch that daily comes from the family fish market of the Pontine coast, has made the Chinappi restaurant one of the landmarks of the capital for “good fish”. The spirit of the place manifests itself in the immediacy of the flavors rediscovered, in the combinations dictated by tradition, in the difficult task of making the kitchen a simple and true thing.
