We practice the traditional style of sushi known as Edomae, which is named after Edo, today known as Tokyo. Sushi dates back to the Edo period before refrigeration was available and Tokyo Bay teemed with a wide variety of fish. Legend has it, Chef Hanaya Yohei opened a kiosk and started making sushi in front of customers, which led to modern-day sushi.

The Edomae sushi style involves using the aging process to preserve the fish, develop umami flavors and create a more tender texture. A variety of methods are employed including marinating in soy sauce, simmering in broth, and curing in salt or kombu sea kelp–from a few hours to several days. Today, when fish arrives from Japan, our chefs examine it and decide the best Edomae techniques to use.

This serene Midtown sushi bar can stand up to any other in the world, according to Michelin inspectors who awarded it two stars for the 2018 guide. Executive chef Masaki Saito’s omakase-only (chef’s choice) lunch menu starts at $100 per person and dinner at $300. Place your trust in him. He seems to have ESP when it comes to reading reactions, producing a menu of items that seems tailored to diners’ desires.

We serve only omakase tasting menus and do not offer a la carte ordering. There are 2 menus offered at dinner and 3 at lunch. A credit card is required to hold all dinner reservations and lunch reservations of 4 or more. Reservations cancelled more than 48 hours in advance will not be charged. Dinner reservations cancelled 24-48 hours prior will be charged 50% ($200) per person. Dinner reservations cancelled within 24 hours will be charged 100% ($400) per person; lunch reservations of 4 or more will be charged $100 per person.
