QUIMBAYA by Edwin Rodríguez is the only Colombian signature cuisine restaurant in Madrid awarded with 1 Star by the Michelin Spain & Portugal Guide 2022 and with 1 Sol by the Repsol Guide 2022.

Located on Calle Zurbano 63, one of the most exclusive gastronomic areas of Madrid, we present a proposal inspired by the flavors of Colombia, enriched with traditions and culinary techniques from there and here, under the contemporary, creative and very personal interpretation of our owner chef Edwin Rodríguez.

We expose our concept through a Tasting Menu, which is our specialty. Through this experience we travel the Caribbean, the Pacific, the Andes, the Orinoquía and the Amazon; different gastronomic areas of Colombia that unite with each other through the stories in which our chef is inspired to create the dishes.

We are a different restaurant. In an exclusive space of only 8 tables and overlooking the kitchen, we offer an author’s gastronomic experience and, although we are inspired by Colombia, we do not make traditional Colombian cuisine; we expose the cuisine of chef Edwin Rodríguez through a unique experience, for which rwe recommend having enough timeinyou to fully enjoy it.

The restaurant takes its name from an indigenous native group famous for its gold craftsmanship. At the small bar, you can admire a superb array of Colombian spirits before heading into the minimalist dining room with views of the open kitchen where guests can interact with the chefs at work. The cuisine here is based around two interesting menus, one a tasting menu that takes you on a journey around Colombia’s different regions (Amazon, Andes, Antioquía, Pacific and Caribbean coasts) and another called Hojarascan inspired by the works of the famous writer Gabriel García Márquez.
