Chef Cimarusti is completely dedicated to procuring the finest sustainable seafood—from regional coasts and international waters—and treats those ingredients with uncompromising respect and sophisticated technique. “First and foremost, what guides us here is sustainability,” Cimarusti says. “We use only wild-caught, sustainable products, mostly from American waters, and look to highlight their finest qualities.”

The accolades for Providence include “Top 50 Restaurants in the United States” by Gourmet magazine; “Best Seafood Restaurant” by Los Angeles magazine; the #1 ranking in “Jonathan Gold’s 101 Best Restaurants” in the Los Angeles Times; a James Beard Award, and two highly coveted Michelin stars.

Very few restaurants aim for, little less achieve, the level of grace exhibited nightly at Providence. While this hushed, white-tablecloth restaurant is based around seafood, it’s really much more than a fish palace. It’s one of the finest restaurants on the West Coast. Fish just happens to be its primary muse—from farm-raised sustainable caviar to Dungeness crab, Maine lobster, abalone, geoduck clams, Spanish octopus, Santa Barbara spot prawns and wild, line-caught Atlantic striped bass. Whether you’re ordering a la carte or opting for the chef’s menu (around a $240 splurge), there’s always an incredible cut of steak thrown into the mix as well. Bonus: Providence serves a $95 lunch—and only on Fridays—and it’s one of those Champagne lunches you’ll be reminiscing about for the rest of the year.
