Coffee has always been a never-ending voyage. What began as a search for excellence in a cup ended up becoming a ticket to explore the world. Through our learning of the parameters that are necessary in extracting desirable flavours into the cup, we obtained the title of local barista champion. Evaluating the positive attributes in green coffee, we procure the titles of Q-grader, Q-processor licenses and various judging qualifications.
Our passion in the roasting of coffee has also lead us to many unexplored areas. Even with limited scientific methods available in its quantification, it was still eye-opening and motivates us to learn more. Through practicing with different coffee beans, we would still be able to tell the unique fingerprint of our own roasts and their characteristic products from caramelisation with our eyes closed. We are still after the God shot. But we also understand that we would not be able to achieve it without the hard work of others along the supply chain. The most crucial contributor is the coffee producer. Without them, there wouldn’t be anything. Coffee means the World to us.
Knockbox Coffee Company is opening its newest location in Wan Chai, brewing up its range of carefully selected coffee beans. Its coloured shop window takes inspiration from a coffee flavour wheel and is fitted with a 360-degree coffee bar so its guests can watch baristas do what they do best. Dark doesn’t mean bitter or oily. Dark also represents complexity and sweetness. Our espresso roast emphasises on the products of caramelisation – something that is unique to the roaster and can only be appreciated when the cup is dialled in perfect. Roasting is a craft, and it is best portrayed in a cup of espresso. Can’t make it to the coffee house? Why not make your own?
