Kalachnaya Museum, Kolomna, Moscow Oblast, Russia
The museum revives the old city falconry. The main object of the museum display is the process of baking kalachs recreated according to ancient guidelines. It is a complete cycle – from making hop ferments, “mixing flour”, creating and cutting dough on an ice table – to baking and eating kalachi according to special rules, starting with “roasted lips” and ending with a warm “crumb of the belly.”
The process of kalak production takes place within the walls of an exemplarily restored monument of the mid-19th century, reconstructed in accordance with ancient drawings of a double-decked roast kiln, heated with birch firewood without bark to impart special whiteness to the kalachi.
