“Cooking is above all a matter of heart and intuition, practiced with honesty, humility, and generosity.” The cuisine of Intuition is generous, sincere, and adheres to a principle that Mickaël Marion holds dear: freshness. For years, the chef has been bridging the gap between origin and plate, even in the kitchen; it is improvised daily based on available products, fresh, local, and seasonal. As a fervent advocate of short supply chains and product traceability, Mickaël aims to represent the Normandy terroir through this cuisine.

In the Cotentin Marshes park, every week, the chef gathers wild plants and flowers: elderflower, woodruff, wood sorrel, yarrow, wild garlic. He introduces their flavors into his cooking in search of a unique harmony. Used in their raw state, these plants enhance the dishes, resulting in a fresh and distinctive outcome.
