Gildas (Basque)

The Basque tradition of the pintxos taverna is a space where locals come together as a community to snack on small plates, tell stories, and enjoy a drink. The Gildas menu is a changing exploration of incredible Spanish and Australian produce. Our menu can be enjoyed as a quick bite to eat with a sherry, or a full meal experience.

For Friday lunch, we offer a choice to dine on our set share menus or a lunch version of our à la carte menu. For group bookings of six guests or more, we offer our ‘Basque’ set share menus for the table.

Inspired by Lennox Hastie’s time in the foothills of the Basque country, Gildas is a homage to the original pintxo created in San Sebastian of three simple ingredients; a guindilla pepper, an olive, and an anchovy – a creation which coincided with the screening of the eponymous film starring the stunning Rita Hayworth, Gilda, at the San Sebastian Film Festival in 1946.
