The city by the sea – Bombay has a sweetness for seafood. A whole bream is twice-marinated. First, in a spiced tangy-chilli marinade before being left overnight. Then, in a classic tandoori marinade of ginger, garlic, spices, yoghurt and lime. Finally, it is grilled, finished with a generous pat-down of butter and served with
lemon on the side.
