After more than 40 years and three generations in the same building in the town of Humanes, the former food house and family restaurant of the Sandoval family has taken a step forward and changed scenery to grow. With 2 Michelin stars, 3 M in the Metropolis Guide and 3 Repsol Suns, the Coque restaurant has opened its doors in the heart of Madrid, in a space of 1,100m2 where illusions, dreams and respect fit. Mario, Rafael and Diego Sandoval, the third generation, have devised the space they wanted, each applying wants and aptitudes, always under the global supervision of designer Jean Porsche.
The result is a project that “transmits our current strength,” explains Mario Sandoval. A decoration and layout designed for the enjoyment of the diner, which creates an original and unique gastronomic experience, with a sensory journey through four spaces. Cocktail bar, cellar, kitchen and living room, where a personalized tour and thought to the millimeter ends. In each room, the client will savor the result of Mario’s creative mind, an evolved cuisine but with its feet on its ground, which knows how to adapt and investigate to offer the perfect bite. This magnificent restaurant, occupying around 1 100m² of space, offers various experiences that take place in stages (in the bar, wine cellar, sacristy, kitchen etc) as part of a culinary journey through its elegant facilities, and one which has been designed in a visual way to enhance every sensation to the full. Head chef Mario Sandoval is fully committed to responsible food production and the need for greater knowledge about ingredients. His “Eñe” menu (along with a vegan-vegetarian option) showcases creative cooking which pays homage to the entire country as a result of his travels, replicating the essence of Spain in every dish.
