Chez Wong Resteraunt, Peru
Anthony Bourdain is a fan of the ceviche here. Javier Wong’s ceviche spot is located in his first-floor living room, tucked away in the working-class Santa Catalina neighborhood. Wong adheres to the old Lima adage of only opening at lunch, ensuring the fish he serves is suitably fresh. Part of the attraction is observing Wong deftly fillet scaly carcasses in his tiny, open kitchen before marinating them in leche de tigre salsas and all-important ají chiles. At this no-frills place, Chez Wong offers up some of the tastiest ceviche in Lima; a reservation is essential.
