The kitchen at Written by the Seasons is in the gifted hands of chef duo Melody Bishop and Dennis Kelly, farm-to-table pioneers who came to Dallas by way of California and brought with them a wealth of experience and a deeply held belief that the finest cooking begins in the field, not the pantry. Their menus are celebrations of vegetable-forward, ingredient-led cooking — though celebrating vegetables here does not mean excluding anything else. Dishes arrive with a confident international sensibility that feels entirely natural rather than affected: carrots paired with dukkah, branzino dressed with harissa, pork ribs enriched with miso. Each combination speaks to a kitchen that travels widely in its imagination while remaining absolutely anchored in the produce of its own region. The house focaccia, warm and perfectly textured, has become something of a ritual beginning — one of those dishes guests speak about long after the evening has ended.

The restaurant was founded in 2021 by Brenton Phillips and his wife Hailey Nutt, alongside partner Tripp Russ — a team whose passion for community, craft, and seasonal integrity has built Written by the Seasons into one of Dallas’s most admired independent dining destinations. That passion extends beyond the plate to the cocktail list, which rotates in harmony with the kitchen’s seasonal philosophy, offering drinks that feel as considered and as fresh as the food they accompany. Such has been the success of the Bishop Arts original that a second Dallas location has opened at The Quad in Uptown, designed with a distinctly different character — dark woods, a stunning chocolate-brown marble bar, and sophisticated lighting that creates an atmosphere of intimate elegance. The two locations share a culinary soul but maintain independent menus, each responding to its own neighbourhood while remaining true to the farm-to-table ethos that defines the brand. A third location has since opened in Bentonville, Arkansas, marking the beginning of what promises to be a quietly remarkable expansion carried out with the same integrity and warmth that distinguished the very first dining room on Melba Street.
