The stand’s menu is famously focused, prioritizing exceptional quality over variety. It centers around just four cuts of beef, with the Gaonera taco serving as its crowning achievement. Created in honor of the famous Mexican bullfighter Rodolfo Gaona, this signature taco features a thinly sliced, tender beef fillet seasoned simply with a pinch of salt and a squeeze of lime juice, cooked quickly on the searing grill.
