The story begins with Arnaldo Degoli, who founded the restaurant in 1936 alongside his beloved wife Lina. The name Clinica Gastronomica emerged from Arnaldo’s playful rivalry with the doctors of the Modena polyclinic, who were regular guests: while their clinic sent patients away sad, his clinic sent them away radiant with pleasure, sustained by trolleys of magnificent boiled meats rather than medicine. That joyful philosophy has never wavered.The cuisine is an unhesitating celebration of Emilian tradition in all its glory. Each morning, the sfogline — the traditional pasta makers — prepare fresh pasta by hand, to be served in restorative broth or with sage and butter. Trolleys take centre stage throughout the meal: the antipasto trolley bearing hand-carved prosciutto and erbazzone, the dessert trolley with zabaione poured lovingly over pears in red wine, and most spectacularly, the roast and boiled meat trolley — the pride of the house — laden with succulent, perfectly prepared meats including time-honoured preparations rarely found elsewhere.

The setting, with its atmospheric frescoed dining room inside the ancient palazzo adjacent to the Hotel Aquila d’Oro, carries the warm patina of generations of convivial meals and cherished memories. Service is impeccable and deeply human, orchestrated by a family whose love for their guests is entirely genuine.Arnaldo is not a place for those seeking novelty or reinvention.
