Skua Restaurant

Skua is an intimate, modern Scottish restaurant and bar located at 49 St Stephen Street in the Stockbridge neighborhood of Edinburgh. Established in 2023 by chefs Tomás Gormley and Sam Yorke, who also operate the Michelin-starred Heron in Leith, Skua has quickly gained recognition for its innovative approach to Scottish cuisine.

The restaurant is situated in a cozy basement space characterized by dark, moody décor, flickering candlelight, black walls, and marble tables, creating an intimate and relaxed atmosphere. The setting is designed to offer a warm and welcoming experience, making it an ideal spot for a special night out.

Skua offers a seasonal, refined menu featuring small plates that highlight bold flavors and balance. The kitchen team, led by Head Chef James Aikman, utilizes Scotland’s natural larder, incorporating pickled and fermented produce year-round to craft innovative dishes. Signature items include fried chicken and a trout pastrami served on rye bread with taramasalata, both of which have received praise for their unique and well-balanced flavors.

The cocktail program, curated by bar manager Jacob Thunder, is both innovative and playful, featuring a rotating selection of house favorites alongside classic cocktails available upon request. The drinks menu takes a sustainable approach, preserving the best of Scotland’s natural ingredients for house-made liquors, syrups, and fermentations, complementing the overall dining experience.

Since its opening, Skua has been recognized in the Michelin Guide and The Good Food Guide. In 2025, it was awarded a Bib Gourmand by the Michelin Guide, highlighting its good quality and good value cooking. This recognition has further cemented its reputation as one of Edinburgh’s must-visit dining destinations.

The restaurant operates from Tuesday to Saturday, with dinner service from 5:00 pm to 10:00 pm. The bar remains open until midnight from Tuesday to Thursday and until 1:00 am on Fridays and Saturdays, offering a lively yet intimate setting for guests to enjoy drinks late into the night.
